Costa Rican Meatballs with Tomato Sauce


  • 1. For sauce, in a pan, heat oil on medium heat. Add onion and sauté for about 5 minutes.
  • 2. Stir in remaining ingredients and reduce the heat to low. Simmer for about 15 to 20 minutes.
  • 3. Remove from heat and cool slightly.
  • 4. In a food processor, add cooked sauce ingredients and pulse till smooth.
  • 5. Preheat the oven to 375 degrees F. Grease a glass casserole dish.
  • 6. For meatballs, in a large bowl, add all ingredients and mix till well combined.
  • 7. Make desired size balls from beef mixture.
  • 8. Place the balls in prepared dish. Bake for about 15 minutes.
  • 9. Pour sauce over meatballs and bake for 10 to 15 minutes more.
